Would i be able to have an apartment near the beach, eat out a few nights a week and be able to enjoy the nightlife pretty often? Thanks for the answers!

Quite different from your old question. US$ 2500/month is manageable. The largest expense is the apartment which if you stay the formerly mentioned 6 months would be about $ 1000/month for 6-month lease. The remaining $ 1500/month would provide food and nightlife. Food is fairly cheap if you go to the buffets that charge by the kilo. With an apartment, you can always eat in/cook some meals and stock the refrigerator with beer/drinks.
